“Growth is not always obvious.” ~ Unknown

where’s Crystal?

Can you pick out Crystal in this photo? We had Mardi Gras lunch together at the student center. It was a shame we couldn’t take our time to graze properly because they were serving some delicious food today that included King Cake. I always think of Crystal at Mardi Gras. I have a photo of her and Ken when they first started dating. It was from a lunch we shared with coworkers at Mardi Gras probably twelve years ago. The other person I think of is Sandy Davis. She turned me on to Paczki. Paczki is sweet fruit cream-filled doughnuts of Polish cuisine, and the only time I’ve ever seen them in Kentucky is just before Mardi Gras. According to NBC Chicago, “The fried pastries, pronounced “puhnch-kee,” date back to the 1700s, when people would traditionally use up foods “luxurious” foods like lard and sugar to ensure they wouldn’t be wasted during Lent, a 40-day period of fasting in Christianity.” Being Polish, Sandy knew Paczki and shared her knowledge. Last week, I shared that knowledge with Mom. Needless to say, she has found additional boxes of Paczki since. She loves them. Thank you, Sandy, for sharing your culture, and thank you, Crystal, for sharing a Mardi Gras meal with me for another year. Laissez les bons temps rouler! (Let the good times roll)
