Alert the media – I baked my first bundt cake today. I recently found out that Shero loves lemon cake. I bought a lemon pound cake mix with icing a couple of weeks ago, and that’s when I found out. To my recollection, she has never made a lemon cake of any kind, and I’ve never seen her eat lemon cake. I can’t say I’ve seen her eat lemon pie either. I’ve been studying cooking and baking over the holiday months, trying a few little things here and there, but today I decided it was time to really step out on a limb and try my hand at cake. Last week, as I was thinking about this, I discovered my Mamaw Adams’ bundt pan (seen in the distance in the photo above). That sealed the deal to go bundt, and I found an appealing recipe for an iced lemon pound cake in a bundt pan. After it took an hour and a half to get it into the pan, I laughed when I read “20 minutes prep time” at the bottom of the recipe. Maybe if I had a KitchenAid mixer to blend the cream cheese and butter, fold in 2.5 cups of sugar, 6 eggs, and 3 cups of flour, I could do it in 20 minutes, but the old-fashioned way, by hand, the way I’ve seen Mamaw Adams do it a thousand times? It’s not a 20-minute job if you want the stuff mixed properly, at least not for me. I got it done, though, and I didn’t have the right knife for spreading the icing, but I got that done, too. It was a four-hour event by the time it cooled enough to ice. Shero and I had it for dessert after supper. I asked if she liked it as much as the box cake I made a couple of weeks ago. She said no. <snort> I laughed out loud. I thought it was absolutely delicious and tasted better and fresher than the box cake, but Shero has always favored more processed foods, so I wasn’t entirely surprised by her reaction. She still liked it and complimented its strong lemony flavor, and that’s all that matters. More cake for me!
