prickly pear flower

When we lived in Tucson in the mid-1970s I learned to make Prickly Pear Jelly at school. We made it from the fruit of the Prickly Pear cactus plentiful in the area. Let me tell you, aside from my Mamaw Adams’ crabapple jelly, to this day it is the best jelly I’ve ever tasted. You can get commercially made prickly pear jelly now, but back then it was homemade or none at all. I haven’t tried the commercial brands, so I don’t know if it stacks up against the grade school kid brand. This photo of a Prickly Pear flower was taken last week in Texas. May it offer a little peace and beauty to the world.
