Years ago Sandy Davis, of Polish descent, told me about Pączki. These rather ordinary pastries with an unpronounceable name suddenly started showing up in local grocery stores about the same time I started hanging out with Sandy. I remember clearly Sandy’s excitement about Pączki because she was thrilled these well known – to her – pastries had finally found their way to Kentucky. According to Wiikipedia, “Pączki are filled doughnuts found in Polish cuisine.” They’re made and sold this time of year as a Fat Tuesday Polish Catholic thing much like a King Cake. I went to the store this evening and saw the Fat Tuesday Pączki for the first time since Sandy died. I smiled. It was a sad smile as much as warm smile. I will always miss Sandy and I will always think of her when I see Pączki.
