I’ve probably mentioned that I’ve got a thing for Waffle Houses. Actually, I’m fascinated by the people who work there. The crew follow a particular pattern I’ve noticed. If you’re lucky enough to go in at slow times, you can learn a lot about the crew as they talk amongst themselves as if you’re not there. No matter their circumstances, most are trying to earn a living, raise their children or grandchildren, and do it honestly. I highly respect anyone who can work at Waffle House or any similar cafe food service. It can be hot, gruelling, and not much thanks from the people they serve. Be nice to them, even if they do a crappy job. You never know what they’re going through.
