My longest vacation in nearly 23 years is now coming to a close. These two weeks have prepared me for the final push in completing my HP degree and impending retirement. The finish line is in sight, and as I pondered this timeline over the past two weeks, I cooked. I can cook; I just don’t because I usually don’t have the gumption by the time I get home from work. The amount of mental energy my job takes from me has not been physically healthy, but over these relaxed vacation days, I’ve gotten a good glimpse of my life – and health – to come. So, as I go into my 59th year in about three hours, there’s a sense of fulfilment and desire to reach that finish line strong so the next chapter can begin with zest and excitement… and many more cooking adventures.
